Taishō 10 — the year 1921. Since first raising its noren in Kyobashi, Isehiro has done one thing: yakitori. For a century, in the same neighbourhood, over the same charcoal, the same handwork.

A century of yakitori.
Founded in 1921, Isehiro has kept its noren as a yakitori specialist in Kyobashi for over a hundred years. The work has narrowed, not widened — chicken, salt, tare, and the slow heat of binchotan. Only that, done carefully.
A relaxed lunch by day; the traditional yakitori full course by night — for an entertaining loosened just a little at the collar, or a meal with the family and friends who matter.

One bird, skewer by skewer.
Each morning a fresh bird arrives and is broken down whole, in-house. With Senju leek, shiitake and shishito from specialist purveyors, a veteran griller threads each skewer by hand.
It is cooked over ubame-oak binchotan — a slow, far-infrared fire that crisps the surface and keeps the centre moist. The scent of the charcoal, the exact degree of the grill: judged one skewer at a time.

The fire decides the course.
Dinner is served as a course — breast, liver, gizzard, scallion-thigh, meatball, skin, thigh, duck, wing — sent out in the order the fire prefers, with broth, vegetables and pickles. The order is set by the flame, not the clock.
By day: five- to nine-skewer lunch sets, the yakitori bowl, the daytime course. Skewers arrive one at a time across a quiet, ninety-minute hour.
IV
Kyobashi, Akasaka, Nihonbashi.
The main house is in Kyobashi — counter seats and private tatami rooms across three floors. In April 2026 a new house opened in Akasaka Sannō; and in the basement of Takashimaya Nihonbashi, a counter for takeout.
