A century of smoke, a single craft.

Founded in 1921 — 大正十年 — Isehiro has tended the same charcoal in the same neighbourhood for over a hundred years. The work has narrowed, not widened: chicken, salt, tare, and the slow heat of binchotan.

The counter is hushed. The grill is long. Skewers arrive one at a time, in an order set by the fire rather than the clock. To sit here is to be quiet for an hour or two — and to taste what patience does to a bird.
